There is no doubt about it...I love some alone time in the kitchen. Back when G and I were D.I.N.K.S. (double income no kids) I found this incredible recipe one fall and Pumpkin Ravioli has become an annual tradition for dinner parties. This recipe is time consuming but worth every delicious minute! I have found that I can make them in advance and freeze them. Which is a good thing because with two kids I rarely have an hour to myself, let alone the 4 hours needed to put this ravioli and sauce together.

Friday was a very rainy day and Gordon had the day off. So in an effort to regain some sanity, I spent some time in the kitchen with my pumpkin. This dish can be made several ways (see variations), but I like the ravioli the best. A few things to note: DO NOT use canned pumpkin puree, it will not taste the same at all. Also fresh herbs work best, dried herbs do not give this dish the same taste. You need to make this at least once. It is absolutely amazing and will become your most requested dish!

Pumpkin Ravioli
(adapted from a recipe by Wolfgang Puck)

Ingredients
2 tablespoons unsalted butter
2 pounds fresh pumpkin, peeled and cut in 1-inch cubes
1 cup heavy cream
1 tsp dried bay leaf
2 tablespoons minced fresh sage, plus 6 small leaves for garnish
2 teaspoons minced fresh thyme leaves
2 eggs, beaten
Salt
Freshly ground pepper
1 package Won Ton wrappers
Water (to seal raviolis)

Sauce
1 tbsp unsalted butter
2 cups chicken stock
2 shallots, chopped
1 cup heavy cream

Directions
Heat a saute pan over low heat and add 5 tablespoons of the butter. When the butter is foamy, add the cubed pumpkin and cook, stirring often to stop it from sticking and burning, until it softens and falls into a puree. This will take awhile (about 30 minutes) so empty your dishwasher, read a magazine or, if you must tend to your kids.
Use a potato masher to help mash the pumpkin once it has softened. Add 1/2 of the cream and half the herbs and cook over a low heat for approximately 1 hour, or until the puree is thick and the liquid has evaporated. Stir occasionally to prevent scorching. Remove from the heat and beat in an additional 1 tablespoon of butter. Whisk in the beaten eggs, season, to taste, with salt and pepper and set a side to cool. If you want a more velvety texture use a hand blender to puree the pumpkin.

Place one square won ton wrapper on a dry surface. Using your finger dipped in water, wet the four edges of the wrapper. Place a heaping tablespoon of the pumpkin mixture in the middle of the wrapper. Place another square on top and use your fingers to seal the edges. Make the seal as air tight as possible. Set aside on a cookie sheet  lined with parchment paper. Repeat. You'll get about 30 ravioli.

Prepare the sauce: In a saucepan, melt the butter and add the shallots. Caramelize the shallots and then add the chicken stock. Reduce the stock with the shallots by 1/2. Add the cream and reduce by half.  Strain the sauce into a clean saucepan and add the remaining sage and thyme. Season to taste with salt and pepper.

Add the ravioli to the rapidly boiling water and cook for 4 to 5 minutes. Divide the ravioli among  dishes and spoon the sauce over them. Garnish each serving with a fresh sage leaf and Parmesan cheese. Serve immediately.

Variations:
Place the pumpkin filling in cooked large shells or manicotti. Cover the pasta with the sauce and generously sprinkle with Parmesan. Bake, uncovered, until the cheese is melted and starts to brown. Serve immediately.

I have a problem...I found a website and have not been able to stay out of the kitchen. It doesn't help that I stress bake but this blog has brought my creations to a whole new level. My inability to stop baking from it has also led my weight loss to stall. After much reflection (and sheer determination to wear something from the back of my closet by Christmas) I've decided to only bake once every couple of weeks as a coffee day treat for the ladies. I mean, seriously, could you resist these treats if they were sitting on your kitchen counter???

Turtle Cookies

 These are chocolate chip cookies on crack. Here's the recipe. I thought that letting the dough sit in the refrigerator for 24 hours was crazy but I did it and OH SO GOOD! It hardens up the caramel so that it doesn't melt all over the place. I used chocolate covered caramels in these cookies. These are some serious cookies for serious cookie lovers. These would make a great Christmas gift put together with some Caramel Hot Chocolate mix and a nice mug. (Yes, I'm thinking Christmas gifts already!)

Mocha Scones

Coffee lovers? Pastry addicts? Try these. Use your favorite coffee to make these addictive (as if you would really need a reason). I did replace the chocolate chips with the same amount of mini chocolate chips. I found that added just the right amount of chocolate to the mix. I used dark chocolate in the glaze and added just a pinch of salt to balance out the sweetness. These would be great for Christmas morning (just bake them the night before...super easy and quick to make). Enjoy with coffee when your kids get you up at some unmanly hour to open gifts.

Goody Bars

These are from Betty Crocker and I don't have a picture of the ones I made (the picture is from the Betty Crocker website. Mine looked exactly like that!). Try them and I bet you won't stop at one. Use holiday appropriate coated candies to make them year round. These are like taking the crisp parts off the apple crisp and sandwiching them with chocolate. You just can't go wrong!

The Pumpkin Patch

The weekend before Halloween we took the kids to Dill's farm. They had a blast and so did we. I love our fall traditions and going to Dill's is at the top of my list.

We picked out a few pumpkins, apples and squash. Austin grabbed a Honeycrisp out of the basket at the checkout so he enjoyed a great snack on the drive home. The weather was fabulous and we had a great family morning. Too bad I nearly coughed up a lung on the way home and then had a two hour nap with Amelia...oh well! Can't have it all :)

I love Italian food and I now love anything that saves me time during the hectic week. Let's face it, getting dinner on the table isn't the easiest thing some days. I know it's my own fault because I do spend too much time with my kids (is there really such a thing?) and not enough time being a domestic goddess (as in my pre-baby days). Enter my slow cooker. It is awesome and I just got a brand new 6qt one that has already proven it's worth!
Sorry for the lack of picture. I'll add it after dinner tomorrow night! (Yes you can make this the night before and let it sit in your fridge :) )

Slow Cooker Lasagna
Makes 6-10 servings (Depending on how big you cut the pieces!)


Ingredients
  • 1 jar Pasta sauce
  • 500ml Low fat cottage cheese
  • 1 cup Parmesan cheese
  • 1 egg
  • 1 box Whole wheat lasagna noodles
  • 4 cups Greens (spinach, kale, etc.)
  • 4 cups Squash (butternut, acorn, zucchini)
  • 4 cups Mozzarella cheese
  • Pepper to taste
Cooking Directions
  1. Combine cottage cheese, egg, pepper to taste and 1/2 cup parmesan cheese.
  2. Cut peeled squash into chunks and pulse in the food processor until minced.
  3. Place just enough pasta sauce on the bottom of the slow cooker to coat. Cover the bottom of the slow cooker with a single layer of noodles (break to fit). Layer 1/3 cottage cheese mixture, 1/3 chopped greens, 1/3 minced veggies, 1/2 cup pasta sauce and 1 cup mozza cheese. Repeat twice more.
  4. Cover the top layer with one more layer of noodles. Cover with pasta sauce, remaining parm and mozza cheeses. Cook at low for 4 hours.
My favorite combos for this are:
Red Swiss Chard & butternut and acorn squash
Spinach, shredded chicken & shredded carrots

I love how versatile this recipe is and that it is only limited by your imaginations. Austin eats this up and doesn't even realize how many veggies I'm packing on to his dinner plate!

Thanksgiving weekend was a pretty great weekend. The weather was amazing and the sun came out for a special event for our family. On Sunday Amelia was baptised and we had a great gathering of family and friends at the church and then we had a celebration back at our house. Mass was great and Austin was so well behaved. (At one point he did ask me "Mommy, when the man is done telling his story can we go home?")  Amelia was gorgeous and incredibly well humoured. She didn't cry at all during the sacrament and was just cute as a button the whole time. We were so lucky to have Andrea and RyLee there to take pictures. I'll share those as soon as I can.

Our home was full to the brim with family and friends all loving on our littles. Austin had friends to play with and told me that he had a great day and asked if we could do it again the next day.

Fall dinners


This Holiday Recipe Exchange is giving me such great inspitation in the kitchen!(too bad I missed posting this one in time to be enetred for teh prize) After apple picking at the end of September I had 10lbs of apples in my kitchen and wanted to do more than make muffins and apple crisp. I had some pork chops in the fridge and out came this dish.



Braised Apple Walnut Pork


Prep time: 15 minutes

Cook time: 45-50 minutes
Total time: 50-65 minutes
Yield: 6 servings

Ingredients
6 Porkloin Chops
8 Celery stalks, chopped
1 small Yellow onion, diced
2 cups No sugar added apple juice
3 medium Apples, sliced with skin on (I used Paula Red and Cortland)
1/2 cup Walnuts, chopped
1 cup Cranberries, frozen
2 tbsp cornstarch
2 tsp fennel seeds
salt and pepper

Cooking Directions
Preheat the oven to 350 degrees.

In the bottom of a dutch oven heat 1 tbsp of olive oil. Season the porkchops with salt and pepper and brown them on each side (be careful not to cook the pork through), remove the chops from the pan and set aside.

Add the onion and celery and saute for 3-5 minutes. Add the pork back to the pan and add the apple juice. Cover and bake in the oven for 20 minutes. Add the apples, cover and return to the oven and cook for another 20-25 minutes.

Remove from the oven and set the dish on an oven burner over medium heat. Remove pork from the dish and bring the sauce to a boil, add the cranberries. Dissolve the cornstarch in cold water and add to sauce. Cook until thickened. Add the fennel seeds and walnuts, season to taste with salt and pepper.

Serve the porkchops and sauce with brown rice. Enjoy!

This week is a slow cooker meal and I have plenty of those... I need to cook and post by Friday, I just hope I manage to get it done!

My baby isn't a baby anymore.

Technically he isn't even a toddler, he is officially a preschooler. I was a little in denial that this day was coming. He has changed so much from the chubby cheeked little boy who climbed on pumpkins and blew out two candles on his birthday waffles a year ago to a very articulate, tall and energetic little boy who says things like "Meeleeah I love you very much. Dat's cause I am your big brother." and "Mommy, today I'm two but tomorrow I'll be free." (Not to mention that last night he somehow managed to get a liter of milk off the top shelf of the fridge. He was so very proud of himself and simply replied "I climbed, climbed, climbed" when I asked how he did that.)

Austin's personality is shinning through. He is funny, smart and very caring and I love watching him change and grow. His passion for hockey remains strong and he loves to play sports (he tells Amelia that she has to be his team). I have so many memories of the day he was born and of his life so far. I can not wait to see what is coming next for him.

One thing about having a little girl is that I get to play dress up. We've been really lucky that we've gotten a lot of hand me downs and some very cute gifts. As a result, Miss Amelia is one stylin' little girl. Since she is still pretty small and is covered up most of the time we're out in public, I make sure to complete her looks with a hair accessory.

Thankfully a very good friend of mine has started her own business and is keeping Amelia's collection of hair accessories current and fun. Her clips, bows, headbands and hats are very well made and very well priced.  Shelley has very graciously agreed to handover a collection of accessories to one lucky reader of my blog! Someone will take home a set of Halloween korkers and your choice of a witch or pumpkin clip. A very fun addition to any little "ghoul's" wardrobe!

Chocolate Coconut Cream Pie

I love to bake. It might not be good for my waistline but it sure is good for the soul. A couple of weeks ago we had a few friends over for dinner and I needed to make a dessert.Coincidentally, I had picked up some coconut milk at the grocery store not really knowing what I would do with it ( Yes, I strayed from my list which I rarely do but something just made me do it). The first thing that came to mind was Coconut Cream Pie and the next thing that came to mind was Chocolate Coconut Cream Pie! I wasn't too sure how it would all come together but I think it turned out great...and so did our guests!



Chocolate Coconut Cream Pie
(recipe is a combination of a Martha Stewart recipe and my own tweaking)

1 9" pie crust (you can use frozen or homemade your choice)
2oz Scharffen Berger Semisweet chocolate, melted

Custard:
1 large whole egg, lightly beaten, plus 4 large egg yolks
3 cups canned unsweetened coconut milk
2/3 cup granulated sugar
1/2 cup Scharffen Berger Unsweetened Natural Cocoa Powder
5 tablespoons cornstarch
1/4 teaspoon salt
Ice bath

Topping:
1/2 cup canned unsweetened coconut milk
1 cup whipping cream
1/4 cup icing sugar
1 cup sweetened coconut, toasted
2oz Scharffen Berger Semisweet chocolate, chopped or grated

Directions
Preheat oven to 375 degrees. Blind bake pie shell according to directions (Lining the pie shell with parchment paper, leaving a 1-inch overhang and filling with pie weights or dried beans will help prevent the pie shell from puffing up during baking.) until edges of crust just turn golden, 15 to 20 minutes. Place pie shell on a wire rack to cool completely. Reduce oven temperature to 325 degrees.

Once pie shell has cooled, coat the inside of the shell up to, but excluding, the rim with the melted chocolate. Place in refrigerator or freezer until firm to touch, about 10 minutes.

Prepare an ice bath; set aside. In a bowl, lightly whisk egg yolks; set aside. In a saucepan, whisk together coconut milk, granulated sugar,cocoa powder, cornstarch, and salt. Bring to a simmer (do not boil), and cook, whisking constantly, 3 to 4 minutes.

Whisk a quarter of hot-milk mixture into egg yolks; whisk in remaining milk mixture. Strain into a clean saucepan, and cook over medium-high heat, whisking constantly, until custard is thick and bubbles appear in center, 2 to 3 minutes. Strain a second time into a medium bowl, and cover with plastic wrap, pressing it directly onto surface to prevent a skin from forming. Set in ice bath until completely chilled, 30 to 35 minutes.
Fill crust with chocolate coconut custard, spreading evenly with an offset spatula. In the bowl of an electric mixer fitted with whisk attachment, combine coconut milk, cream and icing sugar sugar; beat until soft peaks form. Spread whipped cream on top of custard. Refrigerate pie at least 3 hours before serving. Garnish with toasted coconut chopped chocolate before serving.

Trust me! You will not be able to put this down until your plate is clean...in fact I'm making mini pies for the baptism reception... so delish!

Our house has been anything but quiet these past few days. In a way I am enjoying the chaos that comes with the change of season but my soul is clinging to all things summer and I am attempting to squeeze every last moment of outdoor summer fun out of these past few days. Although given that it is so chilly this morning I may have to crack and wear jeans. Yesterday I gave into pants for all because it was laundry day and instead of facing 7 loads of laundry to get clean shorts, I through jeans on Austin, yoga pants on myself and light pants on Amelia and ventured out the door.

We've been busy planning a renovation and I am very excited to say that the wall between Amelia's and Austin's rooms will be removed this weekend and rebuilt to give Amelia a little extra space and relocate closets. We have a few more things planned but by October 1, I should have the upstairs done and redecorated. There is just something about that floor that doesn't say home to me. I never really infused personality into the rooms knowing that we'd be doing the construction some day. I've scored some great finds on the Internet and I cannot wait to unveil the end results. I'm especially excited for the kids' rooms. I really want them to have a space they will enjoy being in (because let's face it....once I go back to work and start paying for childcare for two they are stuck with those rooms as they are until they go to school!)

This past week I finally managed to get myself to Chapters to pick up a book called Mamarazzi. I know I am that annoying mother that constantly takes pictures of my littles...and I take a lot of pictures trying to get the perfect shot. So I invested in a book about photographing children to attempt to improve my skills and get more frame worthy shots...like these (only better! lol):

More playing on the agenda for today and I think I need to tackle the Mount Everest of laundry that is accumulating in the laundry room...unless of course the sun comes out and then all bets are off baby!

Over the past few years I've had the great pleasure of getting to know local photographer Sue Siri through my work with the IWK. When I was pregnant with Austin we jumped at the opportunity to have maternity and newborn pictures taken by her and we could not have been happier with the results! So when I found out we were expecting our newest addition, I emailed her to book a spot. Here are a few pictures from both sessions:

University Care Packages

My sister has moved away to school, so naturally I need to send a care package....Turtle cookies anyone?? My Baking Addiction has done it again...I swear everything I try just gets better!

My kitchen smells of warm caramel and sugary butter. I just pulled the last batch out of the oven to cool and will be sending them all to G's office tomorrow so that I don't eat them all. I had to test out the recipe before making it for the package. I actually followed the instructions to a tee. No low fat substitutions for this one, just pure cookie bliss. I couldn't find caramel bits and the thought of unwrapping Kraft caramels and cutting them was not a realistic possibility so I substituted chocolate covered caramels from the Bulk Barn.

A rose tinted view

It has been a hard summer. You've all read about my stress and troubles so I won't repeat the details. I just want to say thank you so much to our friends and family who have been there for us through it all. Thank you so much for your time, for listening and for helping me relocate my rose coloured glasses.

Back in February we had booked a cottage with good' friends and I have been looking forward to our stay on the beach ever since. Coming back from Newfoundland this last time I was counting down the days until our cottage retreat. I desperately needed to recharge and spend some quality time with my family without the worries and stress of the past three months.

We packed up and headed to Cambra Sands on shore of the Northcumberland Straight for the long weekend. I literally felt my stress melting away as we drove up to our cottage right on the beach.

I had been dreaming of this moment for months!

We spent our weekend exploring the tidal pools, catching "kermit" crabs, crabs, clams, little shrimp and finding all the best seashells.

I nursed her watching the sunrise and I remembered all the great times that I had at my grandparents' cottage when I was little, running down to the beach, watching the sun come up with my Nanny and all those campfires. We had to share this campfire but the ooey gooey memories were worth it!

I am cherishing those great days with our friends. After all, the glass is half full!!

She's growing so fast! I can hardly believe that it's been 3 months and 3 days since she arrived in our lives.
